This is a question that award-winning journalist and author Mark Schatzker (listen to Jimmy’s 2010 interview with him in Episode 402) has been investigating for several years and it comes down to this–flavor! Our bodies are hard-wired to be attracted to great-tasting foods because historically these have been the ones with the most nutrition in them. Mark has written a new book about this entitled The Dorito Effect: The Surprising New Truth About Food and Flavor that details his investigation into how the flavor has been removed from food for decades through genetic manipulation and questionable farming practices.

Listen in as Jimmy and Mark discuss how he’s been “following the flavor trail” since writing his Steak book, how it shocked him that a grass-fed steak tasted the best, a cow gets their nutrients through flavor, how talking about fat and sugar are the wrong direction in discussion nutrition, the consumer is deeply confused by the nutritional claims put on food packaging, making food more abundant and more cheap has stripped real food of its flavor, we’re wired for deliciousness through great food, the reason he called his book The Dorito Effect, we have mastered the art of synthetic flavors, flavor is the language of nutrition, people live in a fake food environment and don’t know what real food is supposed to taste like, how easy it is to down 1200 calories at fast food and still be hungry, real food is satisfying where you eat it and you’re done, the goat study that explains the importance of the connection between flavor and micronutrients, of the hundreds of flavor profiles most people only turn to 20 of them, one of the best indicators of junk food is anything with synthetic flavorings, why “natural flavors” is an utterly meaningless term, consumers still exert a lot of power and can reject the engineered foods, the problem with the tradeoff between quantity and quality, it is possible to get real food that tastes good by sacrificing yield for quality, there’s nothing better than growing your own garden full of food, and how making real food tasting good again will make it more desirable.
