Embracing real food certainly provides you with the proper nutrients your body needs to function optimally, but there are unintended consequences to health when people don’t get certain micronutrients like Vitamin B12 into their body. This has been the passion of nearly three decades of work by a Shelby, Michigan-based ER nurse and paramedic named Sally M. Sally herself was diagnosed herself with Vitamin B12 deficiency after doctors failed to properly identify her condition. That’s what started her on a rebellious mission to share with the whole world about the impact this is having on people. What she began to notice over the years of observing patients was a significant lack of this one micronutrient was leading to some rather profound issues with children beginning in the womb and all the way through adolescence and their brain development. The gateway into finding Paleo for most people is as a direct result of dealing with some form of chronic health problem. For Jenni Hulet from “The Urban Poser” blog, her life was turned upside down in 2010 when she went from being an active mother, yoga teacher, and chef to being unable to get out of bed because of uncontrollable pain and muscle spasms. After months of unproductive doctor visits going through the conventional medicine route, she began to fear that all her creative pursuits were over and that she would have to resign herself to a life of pain management. Eventually, a doctor was able to identify an emerging autoimmune condition that, though devastating, could be fully recovered through changes in her nutrition and lifestyle. Jenni was diagnosed as severely gluten and casein intolerant and was put on a strict diet and supplement regimen to heal her ravaged body.

The process of facing down her worst fears and walking a lengthy path of recovery inspired a new expression for Jenni’s passion: to bring beauty, flavor, and freedom to those struggling with the fear and difficulty of living with health restrictions.
